The Proving Room opened in a former launderette and kept the tiled floor. Bread is proved overnight and baked from five, and the board over the counter is rewritten every morning — which is why the menu runs to eight sections.

Coffee is a supporting act here: a Dublin roaster's house espresso, and one filter that changes weekly. There's a long room behind the counter and a bench on the footpath outside. No bookings; seats are first come, first served.
