The bakery
The Proving Room opened in a former launderette on Dunville Avenue and kept the tiled floor. Bread is proved overnight and baked from five, and the board over the counter gets rewritten every morning, which is why the menu runs long.
Coffee is a supporting act: a Dublin roaster's house espresso, and one filter that changes weekly. The rest of the counter is sourdough, morning buns, sausage rolls, tarts, and a short lunch menu from 11.30.
